The more recent low carb diet plans contain low GI foods. This helps to keep blood sugar relatively stable throughout the day. Let's try and understand the significance of stable blood sugar as it applies to weight loss using the following flow chart.
When you feel hungry (especially after skipping a meal), your blood sugar level is low.
You tend to eat foods with a high GI (rice, pasta, potatoes, candy etc).

Your body releases high amounts of insulin as a reaction to your high carbohydrate intake.

This insulin suddenly lowers your blood sugar, leading to more cravings for sugary foods. This is dangerous, and is called Stage 1 in the Insulin resistance syndrome'.

This lead to weight gain because the body stores excess carbohydrates as fat.

The process repeats itself over several years, eventually leading to elevated carbohydrate cravins, easy weight gain, abdominal fat, high blood fat levels, high blood pressure, hardening of the arteries (atherosclerosis), high and low blood sugar swings, adult-onset diabetes and a strong potential for heart disease. This is called Stage 4 insulin resistance syndrome.
How to detect if you are in Stage 1.
In this first stage of insulin resistance syndrome, you may find that within two hours after eating high carbohydrate foods you feel light headed, irritable, or unable to concentrate. In addition to craving high carbohydrate foods you may gain weight easily as an increased quantity of the food energy (transformed into blood sugar) is channeled through the liver turned into blood fat, then stored in your fat cells.
